Healthy Food Cooked for You 

 I have met many people who want to eat healthier, but don't have the time or knowledge to eat as well as they would like.   I offer soups, salads, entrees, and desserts made with a minimum of ingredients.  I use produce from my own gardens whenever possible.  I do like to play with food.  So I am constantly on the prowl for delicious, nutritious recipes.  The selections vary from week to week, but if you really like something just let me know and I'll put it on another menu soon.

From the Gardens:

Saute Greens - A variety of kale, broccoli raab, mustards and other greens. $6/bag

Jerusalem Artichokes- A root vegetable similar to a potato. Enjoyed raw or roasted. Low glycemic index. $2/pound

Chestnuts - Plentiful supply - delicious roasted.  $5/pint (currently frozen to prevent insect and mold damage) 

New Potatoes - Freshly dug , a mixture of red, white, purple and golden potatoes  $2/pound

Golden and Red Raspberries - organically grown.  Frozen-$5/pint

 

From the Dairy Farm:

Raw Cow Milk -from happy cows in Swan Lake, NY $6/gallon $3/half

Raw Goat's Milk - from happy goats sharing space with those happy cows, sheep, horses, donkeys, alpacas, ducks, turkeys, chickens, pigs and others! $8/gallon $4/half $3/quart

Cream -  $4/pint $7/quart

Yogurt - Regular, Plain $4/quart

Yogurt - Greek style, Plain $4/pint

Ginger Raspberry Keifer - Cultured, Happy Goats milk,Good for your digestive health. with my own raspberries $6/quart

Banana Nut "Ice Cream" - Using only bananas, nuts, and a bit of maple syrup. Maybe some chocolate chips! $5/pint

Golden Milk Elixer - Fresh Turmeric, Cinnamon Sticks, Cardamom, Fresh Ginger and local maple syrup, infused into local raw milk.  $4/quart   (Dairy-Free Version w/ mixed nut milks - $5/quart) Try serving warm before bed for a better sleep)

Golden Rice Pudding - A custard using Jasmine Rice, lots of golden milk, eggs, organic sugar and spices. $5/pint w/fruit $6/pint

More Cultured Products:

Kombucha-  Made with Organic Green and Black Tea, Non-GMO Sugar, and cultures. Full of beneficial Probiotic bacteria. Flavors this week are Ginger or Raspberry $6/quart

Spinach & Peashoot Salad w/ spicy melon dressing-Our own greens w/ a dressing of Pureed cantaloupe and Raspberries. Topped with Roasted Pepitas.  

Broccoli Cranberry Salad - Chopped raw broccoli with sunflower seeds, pea shoots, pumpkin seeds, red onion, smoked dulse and dried cranberries. (Complete protein, Also Paleo and Keto friendly.)

Chinese Eggplant Salad - Cubes of Roasted Eggplant with raw cabbage, pea shoots, peppers, carrots and Onions. toasted almonds, and a garlicy dressing.  (Keto, Paleo and complete protein)

Ukrainian Cabbage Slaw- A lacto-fermentation of red & green cabbage, carrots, onions  and peppers. (Paleo, Keto)

Brassica's w/ a crunch - Kale and brussel sprouts with cashews and cranberries.  A sprinkling of Parmesan cheese and a simple lemon/EVOO dressing.

From the Kitchen: 

Butternut Squash and Spinach Lasagna - homemade Ricotta, spinach & spices hidden in the lasagna noodle. - covered with a flavorful butternut sauce. $6/serving

Sweet potato & Black Bean Chili - The regular chili ingredients with sweet potato rather than beef.  Served with Jalapeno corn-bread.  $7/serving

Burrito Bowl - Cilantro/Lime Rice on the bottom, Black beans, shredded cabbage, peppers, red onions,  tomatoes & cheddar cheese with a side of Mango dressing  $6/pint

Choices for Meat Lovers:

Cheese and Sausage Comfort Food -  Bread, cheese, sausage, milk and spices blended together to make a delicious end to a cold day. $5/dish

Salmon Cakes - Organic, Irish salmon from Samaki in Port Jervis.  Roasted and combined with baked potatoes, onions, celery, capers and spices.  Rolled in Cornmeal before pan frying.   $5/each

Roasted Mushroom & Sunchoke Bisque- Using my own potatoes and sunchokes, local mushrooms, onions & garlic, cream and a mushroom broth. (frozen) (Keto and Paleo) 

Cauliflower soup- A creamy pureed soup with cashews, cauliflower, lemon, cream, veggie broth, a bit of feta and spinach.  ( in frozen form)

African Peanut Stew -   A thick stew of sweet potatoes, tomatoes, cauliflower, kale, onions, garlic, peanuts and spices.  (in frozen form). Vegan, gluten free

Red Lentil Kale Soup - Lentils, Chickpeas, Black Beans, Tomatoes, Brown Rice, Carrots, Celery, Onions, Coconut Milk,and so much more. (in frozen form). Vegan, Gluten free

 

From my Bakery -

Apple Cake - Farm Market Apples in a blondie-like cake. Yummy ! $2/slice $10/ nice sized chunk

Pumpkin Pie Bars - Pumpkin Pie filling in a Pecan crust. in bar cookie form. $10/ 6 bars

Amazing Granola Bars - Cashews, Almonds, Pecans, Coconut ,Sesame, Flax, Chia, Hemp hearts, raisins, Maple Syrup &  coconut oil - dipped in quality dark chocolate. $3.00/ each Vegan, gluten-free
